Sizzling Sambal Noodles

Noodles, sambal, sizzle! For this searing hot recipe, we took inspiration from the sizzling hot oil sauces popularly used in Chinese noodle dishes like biang biang mian and cumin lamb noodles, and made it our own with a splash of sambal. All you really need is some cooked noodles, sambal, and a couple of aromatic ingredients like garlic, scallions, and soy sauce. Just add just two spoonfuls of hot oil onto the aromats to crisp them up and draw out their flavor, then toss everything together to coat the noodles with a lip-smacking sambal savoriness.

Sizzling Sambal Noodles

INGREDIENTS

  • 200g dry wheat noodles, or any other noodle of choice
  • 1 tbsp Homiah Crispy Sambal
  • 1 tsp brown sugar
  • 1 tbsp soy sauce
  • 1 Thai red chili, thinly sliced
  • 2 cloves garlic, minced
  • 1 stalk scallion, thinly chopped
  • 1 tbsp fried shallots, to garnish
  • 2 tbsp neutral oil

METHOD

  1. Ready a large pot of boiling water, then cook the noodles in it based on package instructions.
  2. When the noodles are done, transfer it into a heat-proof bowl, and add the Homiah Crispy Sambal, brown sugar, soy sauce, sliced chili, garlic, and scallions.
  3. Pour the neutral oil into a small pot, and heat it over medium heat. The oil is hot enough and ready when a wooden chopstick dipped into it starts to bubble.
  4. Pour the hot oil over the noodles and the toppings and hear it sizzle. Then, with chopsticks or a pair of tongs, toss the noodles and the ingredients all together until the noodle is evenly coated.
  5. Transfer the noodles into serving bowl, top with a sprinkling of fried shallots, and eat!
